Ingredients:
1 1/2 cupBroccoli flowerets
1 cupYellow summer squash
3/4 cupAsparagus pieces
8 ozHealthy favorites low-fat
-Mozzarella, shredded
4 Pita bread rounds
3 Plum tomatoes, sliced
2 tbspFresh basil, minced
1/4 cupFrozen peas, thawed
2 tbspParmesan, shredded
Procedures:
1Preheat oven to 400°F.
2Cook veggies until crisp-tender.
3Drain.
4Sprinkle ?c mozzarella on each pita bread.
5Top with tomato slices; sprinkle with basil.
6Arrange cooked veggies and peas on tomato slices.
7Sprinkle with remaining mozzarella and parmesan.
8Place on cookie sheet.
9Bake 8 minutes or until mozzarella cheese is melted.
