Ingredients:
1 1/2 lbsLean pork
1/2 lbsPork fat, no gristle
1/2 tspMace
1 tspSalt
1/4 tspFresh ground pepper
1/4 tspDried sage and marjoram
1/8 tspGround nutmeg and/or cloves
1/8 tspCayenne pepper
Procedures:
1Mince the meat and fat twice, then mix very well and season.
2Fry a teaspoon or so to check the flavor until you get it the way you like it.
3Add more herbs and spices as desired.
4Fill the skins.
