| lbs | Lean pork | | 1/2
| lbs | Pork fat, no gristle | | 1/2
| tsp | Mace | | 1
| tsp | Salt | | 1/4
| tsp | Fresh ground pepper | | 1/4
| tsp | Dried sage and marjoram | | 1/8
| tsp | Ground nutmeg and/or cloves | | 1/8
| tsp | Cayenne pepper |

Procedures:
