Ingredients:
1 lbsPig's liver
1 1/2 lbsUnrendered lard, chopped
120 fl ozPig's blood
2 lbsBreadcrumbs
4 ozOatmeal
1 Medium onion, chopped
1 tspSalt
1/2 tspAllspice
1 Beef casings
Procedures:

4Stew liver in boiling salted water until tender.
5Remove liver, and mince.
6Reserve cooking liquor.
7Mix all ingredients in large bowl.
8Stir thoroughly until blended.
9Fill casings with mixture.
10Tie off in one-foot loops.
11Steam for 4-5 hours.
12Leave until cold.
13Cut into ?inch slices as required and fry in hot fat on both sides until crisped.
