Ingredients:
2 1/2 lbsParsnips
2 ozButter or bacon fat
3 tbspStock
1 xSalt and pepper
1 xPinch nutmeg
Procedures:
1Peel parsnips, quarter, and remove any woody core.
2Parboil for 15 minutes.
3Place in an ovenproof dish.
4Add stock and sprinkle with salt, pepper and nutmeg.
5Dot with butter and bake for 30 minutes on a low shelf in a moderate oven.
