Lemon tea snow with strawberry sauce

Ingredients:
SNOW
1 xEnvelope Unflavored Gelatin
1/4 tbspSalt
3 tbspInstant Tea, lemon flavored
1 tbspGrated Lemon rind
3/4 cupSugar
1 cupBoiling water
1/3 cupLemon Juice
2 xEgg Whites
STRAWBERRY SAUCE
1 1/2 cupHalved Strawberries
1/2 cupCurrant Jelly(or lemon jelly
1 tbspCold water
1/3 cupSugar
2 tbspCornstarch
Procedures:
1Snow: in a medium bowl, mix gelatin with sugar and salt.
2Add boiling water and stir until gelatin as completely dissolved.
3Mix in tea, lemon juice and rind.
4Chill, stir occasionally until thickened and mixture mounds when dropped from a spoon.
5Add egg whites to thickened gelatin.
6Beat at high speed until mixture begins to hold its shape, about 10 minutes.
7If kitchen is very warm, beat over ice water.
8Turn into a 6-cup crystal bowl.
9Chill until firm.
10Strawberry sauce: in a saucepan, combine strawberries, sugar and jelly; bring to a boil.
11Mix cornstarch with cold water.
12Add to strawberries and cook, stirring constantly until clear.
13Chill, serve over snow.
14Pair this delectable dessert with a pitcher of iced tea, garnished with a lemon slice or sprig of hot tea.
