Lemon mayonnaise

Ingredients:
1 tbspCornstarch
2 tspDry mustard
1 1/2 tspSalt
1 cupWater
2 medEggs, beaten
1/3 cupLemon juice, fresh
2 tbspWhite vinegar
Sugar substitute to 6 ts

Procedures:
1For fruit, chicken, or seafood salads.
2Combine cornstarch, mustard, and salt in the top of a double boiler.
3Combine water and beaten eggs.
4Slowly add to cornstrch mixture, stirring constantly, until smooth.
5Cook over simmering water for 5 minutes, stirring constantly.
6Very slowly stir in the lemon and vinegar.
7Continue cooking and stirring over simmering water for 10 more minutes.
8Remove from heat.
9Add the sweetener; mix well.
10Pour into a pint jar, cover, and store in frefrigerator.
11Stir well before each use.
