Ingredients:
1/2 cupButter
1/2 cupSugar, or
1/3 cupHoney
4 Eggs
1 Egg Yolk
1/2 cupFresh Lemon Juice
3 tbspLemon Peel, grated
Procedures:
1Melt butter in a double boiler over simmering water.
2Add sugar; stir until dissolved.
3Using a wire whisk, beat in eggs, egg yolk, lemon juice and peel.
4Cook over low heat, stirring, until mixture thickens.
5Do not overcook, as curd may curdle and separate.
6Remove from hot water.
7Cool 5 minutes.
8Pour into containers and seal.
9Refrigerate for up to 2 weeks.
10Serve with muffins, scones, english muffins, or toast.
