Ingredients:
3 ozLime Jell-O
3 ozCherry Jell-O
3 ozLemon Jell-O
1/2 cupWater, boiling
10 ozPineapple, crushed, juice
-reserved
1/2 pintSour cream
1/4 cupPecans, coarsely cut
4 ozMaraschino cherries, drained
Whipped cream
Procedures:
1Prepare lime jell-o according to package instructions; pour into an 8x8 oiled pan.
2Refrigerate two hours, or until set.
3Dissolve the lemon jell-o in boiling water.
4Mix pineapple, sour cream, nuts and cherries, and add to jell-o.
5Spread carefully on top of congealed lime jell-o; refrigerate again until set.
6Prepare cherry jell-o, and quickly cool to room temperature, then pour gently on top of the lemon layer, being careful not to pour so quickly that the layers mix.
7You"re trying to achieve a "geological" effect when the parfait is sliced.
8refrigerate until all layers are set.
9Cut into squares and serve topped with whipped cream.
