2 1/4 cupAll-purpose flour
2/3 cupHoney-crunch wheat germ
1/2 cupOats, uncooked
1/4 cupBrown Sugar, packed
1 tbspBaking powder
1/2 tspSalt
1/4 tspBaking Soda
10 tbspLight Corn Oil Spread/1-?/td>

1 1/2 cupMashed Bananas, about 3 med
6 ozCan frozen apple-juice
Concentrate, thawed
1/2 cupEgg substitute, thawed
1/3 cupWalnuts, chopped
1 tspVanilla extract
Procedures:
1Directions: about 2 hours before serving, or early in the day: Preheat oven to 350°F.
2Grease 9"x5" loaf pan.
3In large bowl, mix first 7 ingredients.
4With pastry blender, cut in corn-oil spread until mixture resembles coarse crumbs.
5Stir in bananas, undiluted apple-juice concentrate, egg substitute, walnuts, and vanilla just until flour is moistened.
6Spoon batter into pan.
7Bake 60 minutes or until toothpick inserted into center of bread comes out clean.
8Cool bread in pan on wire rack 10 minutes; remove from pan and cool slightely.
9Serve warm, or cool completely to serve later.
10Makes 18 servings.
