Ingredients:
1/2 cupSour Cream, Imitation -- fat
Free
2 tspBaking Soda
1 1/2 cupSugar
1/4 cupMargarine -- softened
1/2 cupEgg Beaters. 99% Egg
Substitute -- thawed
3/4 tspSalt
3 cupFlour
3 medBananas -- mashed
1 tspVanilla
12 ozChocolate Chips -- low fat
1/2 cupNuts -- chopped
Procedures:
1Heat oven to 350°F.
2Lightly spray two 9x5x3-inch loaf pans with non-stick vegetable cooking spray.
3In small bowl, stir together sour cream and baking soda; set aside.
4In large bowl, beat sugar and margarine on medium speed of electric mixer until well blended.
5Add egg substitute and salt; beat well.
6Gradually add flour to sugar mixture, beating until well blended.
7Add sour cream mixture, banana and vanilla; beat until smooth.
8Fold in chips and nuts.
9Pour batter evenly into prepared pans.
10Bake 45 to 55 minutes or until wooden pick inserted in center comes out clean.
11Cool 10 minutes.
12Remove from pans to wire rack; immediately wrap in plastic wrap.
13Cool completely before slicing.
