Ingredients:
1 cupWhole-wheat flour
1 cupAll-purpose flour
1 tspBaking soda
2 tspDouble-acting baking powder
1/4 tspSalt
1 tspGround ginger
1/4 tspGround cloves
1 tspCinnamon
1/3 cupButter
1/2 cupSugar
1 Egg
1/2 cupMolasses
1/2 cupHot water
2 cupUnsweetened applesauce
2 tbspBrown sugar
3 tbspCandied ginger root, finely
-chopped
1/2 tspCinnamon
Procedures:
1Recipe by: elizabeth powell preparation time: 1:00 sift together flour, soda, baking powder, salt, ginger, cloves, and cinnamon.
2Cream butter and white sugar.
3Beat in egg and molasses.
4Stir in dry ingredients, alternating with water.
5Place applesauce in a buttered dutch oven or other large, heavy casserole dish.
6Mix brown sugar, crystallized ginger, and ?teaspoon cinnamon.
7Sprinkle over applesauce.
8Pour gingerbread batter over all.
9Bake at 350 °F for 35 minutes, or until gingerbread is done.
10Serve at once.
