Ingredients:
3 1/2 lbsMcIntosh apples, peeled, cor
2 tspPowdered ginger
1 tbspCornstarch
1 xJuice of 1 lemon
2 tbspBrandy, bourbon or scotch
3 tbspButter
2 tbspChopped candied ginger
1 cupSugar
1 tspVanilla
1 cupRaisins
24 ea Gingersnap cookies
Procedures:
1Toss the apple slices with lemon juice.
2In a large, heavy pot, melt 2 tbs butter, add apples with lemon juice, tossing well.
3Stir in powdered ginger and ?cp of the sugar.
4Cook until apples start to release their moisture.
5In a small bowl, dissolve the cornstarch in the liquor.
6Add it to the simmering apples and stir for 1 minute.
7Stir in candied ginger, vailla & raisins.
8Grease a 9-inch casserole with remaining butter & dust with half the remaining sugar.
9Line the casserole with enough of the gingersnaps to make a single layer on the bottom & up the sides.
10Fill with apples mixture and smooth on top.
11Arrange remaining cookies on top & sprinkle with remaining sugar.
12Bake at 450°F for 20 minutes, until apples are bubbling & sugar has partially melted.
13Cool for 10 minutes before serving.
