Ingredients:
2 cupAll purpose flour
1 tspCinnamon
1 tspNutmeg
1 tspAllspice
1 tspOrange peel, grated
1/2 tspMace
1 tspBaking powder
1/2 tspBaking soda
1/2 tspSalt
1 cupOrange concentrate, thawed
1/2 cupApple sauce
1/3 cupVegetable oil
1 tspVanilla
3/4 cupPecans or walnuts, chopped
1 cupDried apricots, chopped
1 cupDates, chopped
Procedures:
1Pre-heat oven to 300°F.
2Lightly oil a 1 ?quart loaf pan & set aside.
3whisk together the flour, spices, peel, baking powder, soda & salt.
4In a in a food processor or blender, blend together the orange juice, apple sauce, oil & vanilla.
5combine the wet with the dry ingredients.
6Stir until the mixture is just combined.
7Fold in the nuts & add the dried fruit.
8Pour batter into the loaf pan & bake until a knife inserted into the centre comes out clean, about 1 ?hours.
9Cool on a wore rack.
