Ingredients:

| tsp | Baking powder | | 1/4

| cup | Flour | | 1
| cup | Yellow cornmeal | | 1/3
| cup | Madeira | | 1
| lbs | Pineapple, peeled, cut into | | | -? thick slices, core | | | -removed (about ?/td> | | | -med pineapple) | | 3/4

Procedures:
| 1 | Cream together granulated sugar and ?cup butter at medium speed in mixer bowl until smooth. | | 2 | Lower speed; add vanilla, nutmeg, eggs, yolks and milk. | | 3 | Mix until incorporated. | | 4 | Add baking powder and salt, then flour and cornmeal. | | 5 | Mix until fluffy. | | 6 | Set aside. | | 7 | Combine remaining ?cup butter, madeira and pineapple in heavy, 10-inch oven-proof skillet over medium heat and cook 20 minutes. | | 8 | Pineapple will release a lot of liquid. | | 9 | Remove pineapple with slotted spoon. | | 10 | Cook liquid until it"s reduced nearly to a glaze. | | 11 | Add brown sugar and cook until mixture becomes smooth, about 2 minutes. | | 12 | Replace pineapple slices, arranging them nicely in syrup. | | 13 | Pour cake batter over fruit. | | 14 | Bake at 375f on middle rack 20 to 25 minutes. | | 15 | When done, wooden pick inserted into center of cake will come out clean. | | 16 | Place large platter over skillet and turn upside down to remove cake from skillet. | | 17 | Let cake cool. |
