Fresh pineapple upside-down cake

Ingredients:
2/3 cupGranulated sugar
3/4 cupUnsalted butter
1 tspVanilla
1/4 tspGround nutmeg or mace
2 Eggs
2 Egg yolks
1 1/2 cupMilk
2 tspBaking powder
1/4 tspSalt
1 1/2 cupFlour
1 cupYellow cornmeal
1/3 cupMadeira
1 lbsPineapple, peeled, cut into

-removed (about ?/td>

3/4 cupDark brown sugar, packed
Procedures:
1Cream together granulated sugar and ?cup butter at medium speed in mixer bowl until smooth.
2Lower speed; add vanilla, nutmeg, eggs, yolks and milk.
3Mix until incorporated.
4Add baking powder and salt, then flour and cornmeal.
5Mix until fluffy.
6Set aside.
7Combine remaining ?cup butter, madeira and pineapple in heavy, 10-inch oven-proof skillet over medium heat and cook 20 minutes.
8Pineapple will release a lot of liquid.
9Remove pineapple with slotted spoon.
10Cook liquid until it"s reduced nearly to a glaze.
11Add brown sugar and cook until mixture becomes smooth, about 2 minutes.
12Replace pineapple slices, arranging them nicely in syrup.
13Pour cake batter over fruit.
14Bake at 375f on middle rack 20 to 25 minutes.
15When done, wooden pick inserted into center of cake will come out clean.
16Place large platter over skillet and turn upside down to remove cake from skillet.
17Let cake cool.
