Ingredients:

| cup | Peaches, fresh/thin sliced | | 2
| cup | Sugar, divided | | 1/2
| cup | Water | | 2
| each | Egg | | 2
| tbsp | Shortening | | 2
| tbsp | Milk | | 1
| cup | Flour, all purpose | | 1
| tsp | Baking powder | | 1/2
| tsp | Salt | | 1
| x | Light cream |

Procedures:
| 1 | Preheat oven to 350°F. | | 2 | Grease 11 x 7" glass baking dish. | | 3 | In medium saucepan, combine peaches, 1 cup sugar, water; bring to a boil, stirring frequently; keep the peach mixture hot. | | 4 | Meanwhile, beat egg, 1 cup sugar, and shortening until fluffy. | | 5 | Add milk; stir in flour, baking powder, and salt. | | 6 | Spread batter in prepared baking dish; pour hot peaches over all. | | 7 | Bake 25 to 30 minutes, or until tender. | | 8 | Serve warm, with cream, whip cream or vanilla ice cream. | | 9 | More fruit cobblers: for peaches, substitutre fresh or thawed frozen blueberries or strawberries, or fresh apples or blackberries. | | 10 | If the frozen fruit is packed in sugar syrup, omit first 1 cup sugar. |
