Fresh peach cobbler w/four variations

Ingredients:
3 cupPeaches, fresh/thin sliced
2 cupSugar, divided
1/2 cupWater
2 eachEgg
2 tbspShortening
2 tbspMilk
1 cupFlour, all purpose
1 tspBaking powder
1/2 tspSalt
1 xLight cream
Procedures:
1Preheat oven to 350°F.
2Grease 11 x 7" glass baking dish.
3In medium saucepan, combine peaches, 1 cup sugar, water; bring to a boil, stirring frequently; keep the peach mixture hot.
4Meanwhile, beat egg, 1 cup sugar, and shortening until fluffy.
5Add milk; stir in flour, baking powder, and salt.
6Spread batter in prepared baking dish; pour hot peaches over all.
7Bake 25 to 30 minutes, or until tender.
8Serve warm, with cream, whip cream or vanilla ice cream.
9More fruit cobblers: for peaches, substitutre fresh or thawed frozen blueberries or strawberries, or fresh apples or blackberries.
10If the frozen fruit is packed in sugar syrup, omit first 1 cup sugar.
