Ingredients:
| 2
| large | Green bell peppers, grilled | | | -- & skinned | | 3
| each | Tomatoes, skinned & seeded | | 1
| large | Spanish onion | | 6
| tbsp | Olive oil | | 2
| tbsp | Vinegar | | 1
| each | Garlic clove, finely chopped | | | Salt |

Procedures:
| 1 | Stem & de-seed the grilled bell pepper. | | 2 | Wash & dice the flesh. | | 3 | Dice the tomatoes & mix with the peppers. | | 4 | Dice the onions & mix them with the other ingredients as well. | | 5 | Combine the olive oil, vinegar & garlic. | | 6 | Add salt to taste & mix well. | | 7 | Pour over the salad & chill. | | 8 | Just before serving, strain off the excess juices & arrange in a salad bowl |
