Fresh fig ice cream

Ingredients:
1 quartFresh, peeled pink figs
-(Celeste variety)
1 pintWhole milk
1 pintHeavy cream
6 Egg yolks
1 1/4 cupFine, granulated sugar
6 Egg whites, stiffly beaten
3 tbspCream sherry wine
Procedures:
1Crush peeled figs with a wooden spoon.
2Scald the milk and cream, but do not boil; skim.
3Beat egg yolks and sugar together until very light.
4Pour hot milk over the egg yolk mixture, stirring constantly.
5Add the stiffly beaten egg whites and stir in the wine.
6Cool, then start freezing.
7When slightly frozen, add crushed figs; stir well.
8Return to freezer and finish freezing.
9Allow to ripen a few hours before serving
