Ingredients:
2 eachApples, Spy
1 tbspLemon juice, optional
2 cupWalnut halves
1/2 cupHazelnuts, filberts
1/2 cupSweet kosher wine

6Chop in food processor until finely grated.
7Transfer to a bowl and stir in lemon juice, if using.
8Add nuts to food processor and chop until finely chopped but with a few little chunks of nuts.
9Stir into apples.
10Add wine slowly - a few tablespoons at a time - until the mixture looks like a paste.
11(if you make this ahead, you will probably have to add more wine as mixture thickens slightly on standing).
12Makes: about 2 cups
