Diabetic strawberry jam

Ingredients:
4 cupStrawberries, halved
1/2 cupConcentrated white grape
-juice (simmered down from
-1-?cups)
2 1/2 tbspLemon juice
1/4 tspGrated lemon rind
1 1/2 tbspUnflavored gelatin (1-?/td>
-envelops)
Procedures:
1Place berries juices and lemon rind in saucepan.
2Mash berries slightly to release juice.
3Heat to boiling.
4Sprinkle with unflavored geltatin.
5Remove from heat, skim and pack into hot jars with hot lids.
6Coool to room temperature before freezing.
7Because this is stored in the freezer, you may use any airtight, leakproof freezer container for sotrage, even plastic containers.
8Tastes better if allowed to sit for a week.
9Freezes beautifully for up to 6 months.
