Ingredients:
Corn, as necessary
BASTING OIL
1/4 cupOlive oil
1/4 cupVegetable oil
1 tbspSweet Hungarian paprika
1 pinchCayenne
1 tspWhole cumin seeds, lightly
-- crushed in a mortar &
-- pestle
Salt & pepper, as necessary
Procedures:
1Use only unhusked corn.
2Soak in water for at least 30 minutes.
3Prepare either a grill or preheat an oven to 375°F.
4While the corn is soaking, whisk together all the basting ingredients.
5When the corn has soaked for 30 minutes, carefully peel back the husks & remove the silk.
6Do not remove the husks entirely.
7Using a pastry brush, brush the oil over the corn.
8Close up the husks & tie them closed.
9You need to ensure that the corn is well wrapped otherwise it will dry out as it grills.
10Place on grill & grill for 15 minutes, turning frequently.
11If you do not turn the corn, it will burn.
12Or, bake in the middle of the preheated oven for 20 to 25 minutes.
13Remove husks & serve immediately.
14Or let cool & refrigerate & serve as part of a salad buffet
