Ingredients:
2 tbspOlive Oil
4 largeChicken Breasts Halves:
-Boneless And Skinless
Salt And Pepper To Taste
2 tbspButter
2 medRipe Pears, Peeled, Cored
-And Sliced Thin
2 tbspLemon Juice
1/4 cupOnion, Minced
1 largeGarlic Clove, Crushed
1/2 cupDry White Wine
1/4 cupChicken Broth
2 tbspHoney
1/4 tbspDried Thyme, Crushed
1/2 cupFresh Or Frozen Blueberries
-Thawed
Procedures:
1In a large skillet, heat the olive oil over medium-high heat.
2Add the chicken and saute four to five minutes on each side until cooked through.
3Remove from the pan and keep warm.
4Melt 1 t of the butter in the pan.
5Add the pears and 1 t of lemon juice.
6Saute until barely tender, about two to three minutes.
7Remove from the pan and set aside.
8In the same pan, cook the onion and garlic for one minute.
9Add the wine and broth.
10Add the honey and thyme.
11Boil until thickened, three to four minutes.
12Return the pears to the pan and add the blueberries.
13Heat through, about two minutes.
14Swirl in the remaining t of butter and t of lemon juice.
15Serve the sauce over the chicken
