| 1 | Preheat oven to 350°F. |

| 3 | Grease a 9" square baking pan. |
| 4 | Cut 1/3 slice off top of each tomato. |
| 5 | Reserve tops for "lids". |
| 6 | Remove seeds from each tomato. |
| 7 | Melt butter in a saucepan. |
| 8 | Add garlic, bread crumbs and chopped parsley; mix well. |
| 9 | Remove from heat. |
| 10 | Add cayenne pepper, paprika, mustard, cheese and salt; mix well. |
| 11 | Spoon into tomatoes and form in neat mounds, pressing gently in shape with fingertips. |
| 12 | Put reserved "lids" on top. |
| 13 | Arrange tomatoes, cut sides up, in greased pan. |
| 14 | Bake in preheated oven 15 minutes. |
| 15 | Garnish with parsley sprigs and serve hot |
