Caramelized apples with vanilla ice cream

Ingredients:
1 1/2 cupSugar
3 tbspButter
1 tspVanilla extract
3 Fuji apples, peeled, cored
-and cut into eighths
Vanilla ice cream
Procedures:
1Pour sugar into large skillet.
2Heat over medium-low heat until sugar begins to melt.
3Continue to heat and simmer until syrup turns pale amber color.
4Swirl in butter and vanilla extract.
5Add to caramel syrup, stirring to coat.
6Stir syrup to dissolve any clumps of sugar.
7Cover skillet and cook over low heat until apples exude juices, about 5 minutes.
8Uncover and continue cooking until syrup is thick, basting apples occasionally.
9Let apples cool slightly.
10To serve, spoon caramel apples into dessert dish and top with scoop of vanilla ice cream.
