Ingredients:
1 tspOlive oil or veg. oil
1 tbspBrown sugar
3 largeCloves of garlic, crushed
1 cupFresh or frozen cranberries
3 tbspRed wine vinegar
5 cupShredded red cabbage, ?lb
1/3 cupDry red wine, (sub.cran juice
1 pinchCayenne pepper
Salt & Pepper to taste
Procedures:
1Serve with turkey.
2Cabbage may be shredded in food processor.
3In large saucepan, heat oil, brown sugar and garlic over medium heat for 2 min. add ?cup cranberries and vinegar.
4Cover and cook about 5 min. or until cranberries pop their skins.
5Add cabbage, wine (sub cranberry or other juice) and vinegar.
6Cover and cook on low heat for about 20 min. or until cabbage is tender; stir occasionally.
7Stir in remaining ?cup cranberries.
8Remove from heat; cover and let stand for 5 min. or until cranberries are warm.
9Season to taste with salt and pepper.
10Serve hot or cold.
