Ingredients:
1 tbspLemon Juice
2 cupFresh Blueberries, OR
2 cupFrozen Blueberries
-Partially Thawed
1 cupUnbleached All Purpose Flour
-, Sifted
2 tbspBaking Powder
1/4 tbspSalt
2 tbspShortening
1/2 cupGranulated Sugar
1 largeEgg
1/2 tbspLemon Flavoring
1/4 cupMilk
Procedures:
1Preheat the oven to 400 °F.
2Sprinkle the lemon juice on the berries and use the berry mixture to fill 6 custard cups 2/3rds full.
3Sift the next 3 ingredients together, and set aside.
4Work the shortening with a spoon until creamy.
5Gradually add the sugar, working until light.
6Beat in the egg and flavoring with a spoon.
7Add the flour mixture and milk all at once, stirring to mix.
8Spread on the berries.
9Bake in a moderately hot oven, 400 °F., for 30 minutes or until done.
10To serve: turn out with the berry side up.
11Serve warm, with heavy cream or vanilla ice cream
