Ingredients:
FRUIT
2 cupBlueberries
2 lbsRipe peaches, pitted
- sliced
3 tbspSugar
2 tspFresh lemon juice
1/2 tspGround ginger
TOPPING
3/4 cupPacked light brown sugar
1/2 cupChopped pecans
1/2 cupAll-purpose flour
1 tspCinnamon
1/2 tspNutmeg
4 tbspUnsalted butter, chilled
- cut in 6 pieces
SERVING
Ice cream for serving
Procedures:
1Heat oven to 375 degrees.
2Have ready an 8- to 9-inch oval or square baking dish.
3For fruit, toss ingredients together and transfer to baking dish.
4For topping, combine brown sugar, flour, cinnamon and nutmeg in a small bowl.
5Cut butter into mixture with a pastry blender or two knives until the butter is the size of small peas.
6Sprinkle over fruit mixture.
7Bake until fruit is tender and topping is golden, 35 to 40 minutes.
8Cool on wire rack.
9Serve warm with ice cream.
