Baked apples with brandy sauce

Ingredients:

4 largeBaking apples (Rome Beauties
-Gold Delicious and Pippins
-work well)
FILLING
4 tbspWalnuts, chopped and toasted
4 tbspRaisins, chopped
4 tbspBrown sugar
1/2 tspCinnamon
1 tspLemon rind
6 tbspButter
BRANDY SAUCE
4 tbspButter
2 tbspWater
1/4 cupDark brown sugar
1 Whole egg and
1 Egg yolk
2 tbspBrandy
Procedures:
1Preheat oven to 375 °F.
2partially core apples from the stem end without cutting through the bottom so the filling stays in apple.
3Butter a 9"x13" glass or enameled baking dish.
4Combine filling ingredients except butter.
5Layer filling mix alternately with butter in apples.
6Arrange in dish and bake for 30 minutes or until tender.
7meanwhile prepare sauce: in top of double boiler over simmering (not boiling) water, combine all ingredients except brandy and cook for 15-20 minutes stirring constantly until thickened.
8Remove from heat and stir in brandy.
9to serve: put some sauce on warmed dessert plates and top with warm baked apples.
