Ingredients:

| | Hard-boiled eggs -- peel | | | Shell | | 3
| | Scallions -- finely chopped | | 12
| oz | Cn tuna-drained and flaked | | 1 1/2
| tsp | Dry mustard | | 3/4
| cup | Soy sauce | | 1
| tbsp | Sesame or peanut oil | | 1 1/2
| tsp | Lemon juice | | | Salt and freshly ground | | | Black pepper | | | Paprika |

Procedures:
| 1 | Slice eggs in half, lengthwise. | | 2 | Remove hardened yolks to a mixing bowl. | | 3 | Add scallions, tuna, mustard, soy sauce, oil, lemon juice, and salt and pepper to taste. | | 4 | Mix well. | | 5 | Fill egg white halves with tuna/egg yolk mixture. | | 6 | Sprinkle tops with paprika. | | 7 | Note: crab meat or abalone may be substituted for the tuna |
