| | Med. size cooking apples | | 4
| | Eggs, separated | | 1/2
| cup | White raisins | | | Juice of ?lemon | | 1/2
| cup | Sugar | | 1/2
| cup | Matzo meal |

Procedures:
| 1 | Peel, core and grate apples. | | 2 | Sprinkle with lemon juice. | | 3 | Beat yolks until light. | | 4 | Gradually beat in sugar, continuing to beat until thick. | | 5 | Stir in lemon juice, apples, matzo meal and raisins. | | 6 | Beat egg whites in separate bowl until stiff but not dry. | | 7 | Fold whites into batter and pour into 2 ?qt. greased casserole. | | 8 | Bake at 350°F. for 40 min. serve hot. |
