Amish apple dumplings

Ingredients:
6 Apples, peeled and cored
Lemon juice
1/2 cupWhite sugar, approx
1 tspCinnamon
Brown sugar
Butter
2 Pie pastry for 2 pies
Sugar sauce:
2 cupWater
3/4 cupSugar
2 tspVanilla
2 tbspButter
1/4 tspNutmeg
1/4 tspMace
Procedures:
1Roll out pastry and cut into squares enough to cover apples completely.
2Peel and core apples.
3Roll in lemon juice.
4Then roll in white sugar and cinnamon combined.
5Place on pastry square.
6Stuff core cavity with brown sugar, butter, brown sugar in equal parts.
7(the amount depends on size of core cavity, just stuff full).
8Fold pastry up around apple to completely enclose it.
9Place in pan.
10Prepare sugar sauce by mixing water, sugar, vanilla, butter, nutmeg, and mace and boiling for 1 minute.
11Let cool slightly.
12Pour over apples.
13Bake in 375°F oven for 1 hour.
14Serve warm.
15Note: apples may be frozen in pastry (before sugar sauce is added) if desired.
16Good dessert to make ahead if you have lots of apples around.
17Just let thaw when ready to use, and cover with sugar sauce and bake as usual.
