Acorn squash stuffed with apple couscous

Ingredients:
1 cupCouscous
1 cupApple juice
1/4 cupPrunes, pitted & chopped
1/4 cupDried cranberries
1/4 cupDried apples
1/4 cupApple juice concentrate
-- thawed
1/4 tspCardamom, ground
1 tbspMaple syrup
4 ea Acorn squash, halved &
-- seeded
1/4 cupPecans, toasted & chopped
-- optional
Procedures:
1Place couscous in a small mixing bowl.
2Set aside.
3bring apple juice to a boil in a small saucepan & pour over the couscous.
4Cover & set aside until the juice is absorbed.
5This will take 15 minutes.
6stir in the fruit, apple juice concentrate, cardamom & maple syrup.
7Set aside.
8steam squash halves until tender, about 15 minutes.
9Drain & place on a baking sheet.
10Preheat oven to 350°F.
11Fill squash halves with the couscous mixture & bake for 20 minutes.
12Top with pecans & serve.
