Ingredients:
FILLING
1/2 cupSugar
3 tbspFlour
1/4 tspNutmeg
1/4 tspCinnamon
Salt
4 cupPeaches, sliced & peeled
2 tspMargarine
CRUST
5 1/2 cupFlour
2 tspSalt
1 lbsShortening
1 tspVinegar
1 cupWater
Procedures:
1Crust: combine salt & flour.
2Cut in shortening.
3Add water & vinegar.
4Mix.
5It should be a firm dough, ready to be rolled.
6If not firm, add a little more flour.
7Divide into Roll one ball thinly & fit into the bottom of a 8" pie plate.
8Filling: combine peaches with sugar, flour, nutmeg, cinnamon & salt.
9Mix well & add to pie crust.
10Roll out remaining pastry & cover pie, seal.
11Pierce the top of the pie in the centre with a sharp knife.
12Bake at 400f for 35-40 minutes.
