Ingredients:

| cup | Green Apples, peeled, cored | | | -and diced | | 1/2
| cup | Apple Juice | | 1/2
| tsp | Ground Cinnamon | | | WAFFLES | | 1 1/2
| cup | All-Purpose Flour | | 1/2
| cup | Whole Wheat Flour | | 2
| tsp | Baking Powder | | 1 1/2
| tsp | Baking Soda | | 1/2
| tsp | Ground Cinnamon | | 1/4
| tsp | Salt | | 1 1/3
| cup | Buttermilk | | 1 1/3
| cup | Apple Juice | | 1
| tbsp | Honey | | 4
| | Egg Whites |

Procedures:
| 1 | Heat oil in a heavy large nonstick skillet over medium-high heat. | | 2 | Add apples and saute until golden brown and just tender, about 10 minutes. | | 3 | Add apple juice and cinnamon and continue cooking until sauce is slightly thickened, about 3 minutes. | | 4 | Cover and keep warm. | | 5 | Sift flours, baking powder, baking soda, cinnamon and salt into a large bowl. | | 6 | Whisk in buttermilk, juice and honey. | | 7 | Using an electric mixer, beat egg whites in another bowl until stiff. | | 8 | Fold into batter. | | 9 | Cook in a waffle iron according to manufacturer"s instructions. | | 10 | Serve immediately with applesauce. |
