Ingredients:
APPLESAUCE
1 tspVegetable Oil
6 cupGreen Apples, peeled, cored
-and diced
1/2 cupApple Juice
1/2 tspGround Cinnamon
WAFFLES
1 1/2 cupAll-Purpose Flour
1/2 cupWhole Wheat Flour
2 tspBaking Powder
1 1/2 tspBaking Soda
1/2 tspGround Cinnamon
1/4 tspSalt
1 1/3 cupButtermilk
1 1/3 cupApple Juice
1 tbspHoney
4 Egg Whites
Procedures:
1Heat oil in a heavy large nonstick skillet over medium-high heat.
2Add apples and saute until golden brown and just tender, about 10 minutes.
3Add apple juice and cinnamon and continue cooking until sauce is slightly thickened, about 3 minutes.
4Cover and keep warm.
5Sift flours, baking powder, baking soda, cinnamon and salt into a large bowl.
6Whisk in buttermilk, juice and honey.
7Using an electric mixer, beat egg whites in another bowl until stiff.
8Fold into batter.
9Cook in a waffle iron according to manufacturer"s instructions.
10Serve immediately with applesauce.
