| tbsp | Fresh lemon juice | | 2
| | Carrots, peeled | | 1/4
| | Lemon, unpeeled | | 1/2
| cup | Golden raisins | | 6
| tbsp | Margarine, melted | | 1/4
| cup | Frozen juice concentrate | | | Thawed | | 1
| tsp | Salt | | 2
| tsp | Cinnamon | | 3/4
| cup | Sugar | | 1/4
| cup | Matzo meal |

Procedures:
| 1 | Preheat oven to 350 deg. | | 2 | Grease 8"x8"x2" baking dish, or 2 ?quart baking dish. | | 3 | Cut apples and potatoes in chunks. | | 4 | Grate in food processor fitted with grater blade. | | 5 | Transfer to large bowl and stir in lemon juice. | | 6 | Change to steel chopping blade (no need to wash bowl). | | 7 | Cut carrots and lemon into chunks and chop finely. | | 8 | Add to apple potato mixture. | | 9 | Stir in raisins, 3 tablespoons of melted margarine, orange juice concentrate, salt, cinnamon, sugar and matzo meal and mix well. | | 10 | Transfer to prepared baking dish and drizzle remaining margarine over. | | 11 | Bake in preheated oven for 1 hour or until browned and firm in center. | | 12 | Makes 8 to 10 servings. | | 13 | Note: for pancakes,drop spoonfuls of mixture into ? deep hot oil. | | 14 | Flatten slightly and fry until crisp and browned on both sides. ~-- |
