Ultimate strawberry cheesecake

Ingredients:
1 1/4 cupGraham Cracker crumbs (fine)
16 ozSoftened Cream Cheese
4 xEggs
2 tbspLemon juice
1 pintDairy Sour cream
1 lbsCottage Cheese, small curd
1 1/2 cupSugar
1/2 cupCornstarch
1/2 cupMargarine or butter
STRAWBERRY GLAZE
1 tbspCornstarch
1/3 cupLight Corn Syrup
1 tspLemon juice
1/4 cupWater
1/4 cupCrushed Strawberries
1 dashRed food coloring(if desired
Procedures:
1Grease 9" springform pan; sprinkle with graham cracker crumbs, tilting pan to coat the sides.
2Into a large bowl, mash cottage cheese through sieve; add cream cheese.
3Beat on high setting with electric mixer until well blended.
4Beat in sugar, then 2 eggs.
5Reduce speed to slow.
6Beat in cornstarch, lemon juice and vanilla, then margarine or butter and sour cream until smooth.
7Pour into prepared pan.
8Bake in 325 deg f oven for 70 minutes or until firm around the edge.
9Turn oven off.
10Let cake stand in oven for 2 hours.
11Take out and chill.
12Remove side of pan.
13If desired, cover with strawberry glaze.
14Freezes well.
15Strawberry glaze mix cornstarch, water and light corn syrup until smooth.
16Add strawberries.
17Bring to a boil for 1 minute.
18Strain.
19Stir in lemon juice and, if desired, a drop of red food coloring.
20Cool slightly, then cover top with glaze.
