Ingredients:
4 cupChick peas, soaked
Salt
1 eachSpanish onion, grated
3 largeTomatoes, skinned, seeded &
-- diced
6 eachSprigs Italian parsley
-- chopped
4 eachSprigs cilantro, chopped
1/4 tspHot red pepper
1/4 tspSweet red pepper
1/4 tspCinnamon
1/4 tspSaffron
1/4 tspCumin
1/4 tspGinger
Black pepper
6 tbspOlive oil
Procedures:
1Drain chick peas & cook in boiling salted water until tender.
2Drain.
3Peel chick peas & combine with onion in a tagine (or shallow casserole).
4Add tomatoes, herbs, spices, salt & pepper.
5Mix well.
6When ready to cook, add olive oil & simmer over a low heat for 15 minutes or until the chick peas are well impregnated with the aromatoc flavours.
