Ingredients:
1 cupDried chick peas, soaked
1/2 cupParsley, chopped
Salt
1/4 tspBlack pepper
2 pinchPulverized saffron
1/4 tspTurmeric
1 tspGinger, grated
1/2 cupOnion, grated
3 tbspOlive oil
8 cupStock
1 tbspTomato paste
1 cupPotatoes, cubed
1/4 cupLemon juice
Procedures:
1Drain soaked chick peas & place in a casserole or soup pot.
2Add parsley, salt, spices, onion, oil & stock.
3Bring to a boil.
4Reduce heat, cover & simmer for 1 hour.
5Add the tomato paste & simer for another 1 hour.
6After 2 hours, add the potatoes & simmer for another 30 minutes.
7Add the lemon juice, check for salt & serve.
