Ingredients:
3 lbsOnion, peeled
1/2 cupButter
1 1/2 tspPepper, black
2 tbspPaprika
1 Bay leaf
3/4 cupFlour
3 quartBeef bouillon
1 cupWine, white
2 tspSalt
1/2 lbsSwiss cheese
French bread
Procedures:
1Slice onions, 1/8 inch thick.
2Melt butter, place onions in it, saut# slowly for 1 ?hours in a large soup pot.
3Add all other ingredients except bouillon, wine and salt, saut# over low heat 10 minutes more.
4Add bouillon and wine and simmer 2 hours.
5Adjust color to a brown with caramel coloring or liquid browning sauce.
6Season to taste with salt.
7Put in refrigerator overnight.
8to serve: heat soup.
9Fill ovenproof casser#le or individual oven- proof bowls with 1 cup soup, top with 3 one-half inch slices of french bread and top with a slice of imported swiss cheese (gruyere preferred).
10Place under broiler to brown, approximately 5 minutes at 550 degrees.
