Puree of fava beans

Ingredients:
1/2 lbsDried fava beans, soaked
3 ea Garlic cloves
1 tspCumin seeds
Olive oil
Salt
1/4 tspZa'atar -=OR=- use thyme
-- oregano or marjoram
Procedures:
1Drain & skin the soaked fava beans.
2Cover with fresh water & cook gently with the garlic & cumin seeds until the beans are tender.
3Drain.
4Puree the beans.
5Stir in enough olive oil & a littel water, to give the puree a soupy consistency.
6Season with salt & beat well.
7Heat just before serving with a little more olive oil & a sprinkling of the za"atar.
8Serve with arab bread & a bowl of mixed spices (ground cumin, cayenne & salt).
