Ingredients:
| 1/2
| lbs | Dried fava beans, soaked | | | 3 ea Garlic cloves | | 1
| tsp | Cumin seeds | | | Olive oil | | | Salt | | 1/4
| tsp | Za'atar -=OR=- use thyme | | | -- oregano or marjoram |
|
Procedures:
| 1 | Drain & skin the soaked fava beans. | | 2 | Cover with fresh water & cook gently with the garlic & cumin seeds until the beans are tender. | | 3 | Drain. | | 4 | Puree the beans. | | 5 | Stir in enough olive oil & a littel water, to give the puree a soupy consistency. | | 6 | Season with salt & beat well. | | 7 | Heat just before serving with a little more olive oil & a sprinkling of the za"atar. | | 8 | Serve with arab bread & a bowl of mixed spices (ground cumin, cayenne & salt). |
