Ingredients:
1/3 cupOlive Oil
1 largeOnion, thinly sliced
1 Clove Garlic, minced
1 tbspParsley, chopped fine
1 tbspFresh Coriander leaves
-Cilantro chopped, or more
1 tspSalt
1/2 tspBlack Pepper, coarsely ground
1/8 tspSaffron, powdered
2 1/2 lbsChicken, broiler/fryer
-cut into serving pieces
1/2 Lemon, cut into 4 wedges
1/3 cupGreen Olives
Procedures:
1Heat oil in a heat-proof casserole or dutch oven.
2Stir in next 7 ingredients.
3Add chicken pieces and turn to coat with onion mixture.
4Arrange lemon wedges over top.
5Cover and simmer turning occasionally, 1 ?to 2 hours, or until very tender.
6Remove chicken to warm serving platter, arrange cooked lemon wedges on top and keep warm.
7Cook liquid, stirring, in casserole over high heat until reduced to a thick sauce.
8Add olives and heat through.
9Pour over chicken.
