Frozen milky way mousse - part 1 or 2

Ingredients:
CHOCOLATE SAUCE
1 cupWhipping cream
1/2 cupSugar
1/3 cupUnsweetened cocoa powder
3 tbspUnsalted butter
1 tspVanilla extract
1/2 tspInstant coffee powder
MOUSSE
1 1/2 cupMilky Way bars, (ab.8 ?oz)
-cut in ?inch pieces
6 ozSemisweet chocolate, chopped
3 ozUnsweetened chocolate, choppd
4 tbspUnsalted butter, (?stick)
1/2 cupSugar
3 tbspWater
3 largeEgg whites
1/4 tspCream of tartar
1 1/4 cupWhipping cream, chilled
1 tspVanilla extract
Procedures:
1For sauce: combine whipping cream, sugar, unsweetened cocoa powder and unsalted butter in heavy medium saucepan.
2Bring to simmer over medium-low heat, whisking constantly until butter melts and sugar and cocoa dissolve.
3Remove from heat and whisk in vanilla extract and instant coffee powder.
4Cool sauce.
5(can be prepared 1 week ahead.
6Cover and refrigerate) for mousse: line 9x5x3-inch loaf pan with parchment paper.
7Combine milky way pieces, semisweet chocolate, unsweetened chocolate and unsalted butter in large heatproof bowl set over pan of simmering water.
8Stir constantly until melted.
9(mixture will look grainy) remove bowl from over water and cool mixture slightly.
10Combine sugar and water in heavy small saucepan.
11Stir over low heat until sugar dissolves.
12Increase heat to high, and boil syrup until termperature reaches 230 deg.
13On candy thermometer.
14Meanwhile, beat egg whites and cream of tartar to soft peaks in bowl.
15Gradually pour boiling syrup into egg whites, beating until stiff peaks form and whites are cool, about 5 min.
