Ingredients:

| cup | Tomatoes, peeled, cored & | | | . chopped | | | . *OR* | | 4
| cup | Canned whole tomatoes, crush | | 4
| cup | Tomato juice | | 14
| | Bay leaves, washed | | 1
| cup | Heavy cream | | 1/4
| lbs | Butter, unsalted | | 1/4
| tsp | Black peppercorns, cracked | | | Salt to taste |

Procedures:
| 1 | Note: may use 2 cups chicken stock and 2 cups tomato juice instead of all tomato juice. | | 2 | Combine the tomatoes, juice and stock (if used) in a saucepan. | | 3 | Simmer for at least 30 minutes. | | 4 | Puree, along with the basil leaves, in small batches, in a blender or food processor. | | 5 | return to the saucepan and add cream and butter, while stirring, over low heat. | | 6 | Garnish with more basil leaves. | | 7 | serve with your favorite la madeleine (read that french) bread. | | 8 | ** scanned and formatted for you by the wee scot -- paul macgregor |
