Fricassee of chicken with tarragon

Ingredients:
3 1/2 lbsChicken, cut into servings
Salt and pepper
3 tbspButter
1/3 cupOnion, finely chopped
1 tspMinced garlic
1 tbspTarragon
2 tbspFlour
1 1/2 cupWater
1 Carrot rough chopped
1/4 lbsMushrooms
1 cupHeavy cream
Procedures:
1Sprinkle the chicken pieces with salt and pepper.
2Heat the butter in a large, heavy skillet large enough to hold the chicken pieces in one layer.
3Add the chicken and cook, turning occasionally, without browning, about 5 min. Add the onion,garlic and tarragon and stir well.
4Sprinkle with the flour, stirring to distribute the flour evenly.
5Add the water, carrot and mushrooms.
6Cover and cook about 15-20 min. Remove the chicken pieces, carrot and mushrooms to a warmed serving dish and keep hot.
7Let the sauce cook down, stirring often, about 5 min. Add the cream and salt and pepper to taste.
8Simmer about 3 min. pour a little sauce over the chicken and serve the rest separately.
