Ingredients:

| cup | Milk | | 2
| cup | Cream | | 1
| cup | Sugar | | | 1 ea Vanilla bean, 4" long | | | 6 ea Egg yolks | | 1
| pinch | Salt |

Procedures:
| 1 | Split and crush the bean in a motar. | | 2 | Place milk, cream, sugar, and bean in an enamel pan over low heat. | | 3 | Bring to the scalding point. | | 4 | Beat the egg yolks with the salt till foamy, then add in the scalded cream mix, mixing well. | | 5 | Pour back into enamel pan and place over lowest heat . | | 6 | Stir constantly until mix coats a metal spoon. | | 7 | Pour through sieve into a bowl and chill thoroughly before freezing in a ice cream maker. | | 8 | (note:the little specks of bean should not worry you: they are an indication that the best ingredients have been used. |
