Ingredients:

| oz | Hot Italian sausage | | | Removed from casing | | 2
| med | Onions, sliced | | 2
| | Garlic cloves, minced | | 2
| | Red or green bell peppers | | | Seeded, cut in 1" cubes | | 1/4
| cup | Chopped fresh basil, OR | | 1/4
| cup | Chopped fresh parsley | | 1
| tbsp | Dried basil | | 1/4
| tsp | Black pepper | | 4
| | Plum tomatoes, chopped | | 1 1/3
| cup | Marinara Sauce | | 2
| tbsp | Olive oil | | | MARINARA SAUCE | | 1
| tbsp | Vegetable oil | | 1/2
| cup | Chopped onion | | 16
| oz | Canned tomatoes, chopped | | 2
| tbsp | Dry red wine | | 1
| tbsp | Tomato paste | | 1/4

Procedures:
| 1 | Preparation: cook vermicelli according to package directions. | | 2 | Drain. | | 3 | In 10" skillet, over medium-high heat, cook sausage 5 minutes stirring frequently to break up. | | 4 | Add onions and cook until onions are softened. | | 5 | Stir in garlic, bell peppers, basil and pepper. | | 6 | Cook until sausage is no longer pink and vegetables are tender. | | 7 | Stir in tomatoes and marinara sauce. | | 8 | Remove from heat. | | 9 | Wipe out skillet. | | 10 | In same skillet, over high heat, heat oil. | | 11 | Add vermicelli, cook two minutes. | | 12 | Reduce heat to medium and cook until edges are browned and crisp, about 5 minutes. | | 13 | With pancake turner, loosen from skillet. | | 14 | Invert vermicelli onto serving plate. | | 15 | Spoon sausage mixture over vermicelli. | | 16 | Marinara sauce preparation: in 1 qt. saucepan heat oil over medium heat. | | 17 | Add onion and cook, stirring often, until soft. | | 18 | Stir in remaining ingredients. | | 19 | Simmer, stirring occasionally, 25 minutes until thick. |
