Ingredients:
2 Red peppers
2 tspOlive oil, divided
4 cupSpinach, coarsely chop
1 clGarlic, minced
1 Sweet onion, sliced
1/2 cupWater
4 smallItalian bread shells
8 ozKraft Healthy Favorites
-Part-skim Mozzarella, shred
1 tspCoarse grind black peppe
Procedures:
1Place peppers on cookie sheet.
2Broil 2 to 3" from the heat until all sides are blackened, about 10 minutes.
3Place in paper bag; cool.
4Seed and cut into strips.
5Reduce oven temnperatute to 450°F.
6Heat 1 t olive oil.
7Add garlic; cook until gragrant.
8Add spinach; cook and stir until spinach is wilted.
9Remove from pan.
10Heat remaining oil in skillet.
11Add onions; cook until onions begin to brown.
12Add water; cover and simmer over low heat until onions are limp, about 15 minutees.
13Remove cover and continue cooking until all water has evaporated.
14For each pizza, place onions on bread shell; sprinkle with ?c cheese.
15Arrange spinach mixture and red pepper strips on shell in alternating rows.
16Sprinkle with ?c cheese and pepper.
17Place on cookie sheet.
18Bake 8 to 10 minutes or until cheese is melted.
