French fritters (beignets)

Ingredients:
1 cupWater
1/2 cupButter
1/4 tspSalt
1 cupSifted enriched flour
4 eachEggs
Procedures:
1Heat water, fat, and salt to boiling.
2Simmer until fat has melted.
3Reduce heat as much as possible without eliminating it altogether.
4Add flour all a once.
5Stir briskly until mixture forms a ball that no longer leaves the sid of the saucepan, but no longer.
6Remove from heat.
7Add eggs one at a time, beating after each addition until mixture is stiff and glossy.
8Drop by spoonful into deep, hot fat (370) and cook until delicately brown.
9As soon as they are cooked enough on one side, they will turn themselves over.
10Remove when browned on both sides.
11Drain and sprinkle lightly with powdered sugar.
12If desired, cut a split in each and stuff with marmalade or chocolate filling.
