Ingredients:

| cup | Water | | 1/2
| cup | Butter | | 1/4
| tsp | Salt | | 1
| cup | Sifted enriched flour | | 4
| each | Eggs |

Procedures:
| 1 | Heat water, fat, and salt to boiling. | | 2 | Simmer until fat has melted. | | 3 | Reduce heat as much as possible without eliminating it altogether. | | 4 | Add flour all a once. | | 5 | Stir briskly until mixture forms a ball that no longer leaves the sid of the saucepan, but no longer. | | 6 | Remove from heat. | | 7 | Add eggs one at a time, beating after each addition until mixture is stiff and glossy. | | 8 | Drop by spoonful into deep, hot fat (370) and cook until delicately brown. | | 9 | As soon as they are cooked enough on one side, they will turn themselves over. | | 10 | Remove when browned on both sides. | | 11 | Drain and sprinkle lightly with powdered sugar. | | 12 | If desired, cut a split in each and stuff with marmalade or chocolate filling. |
