Ingredients:
1/4 cupOlive oil
6 Pieces Frying chicken (legs
-with thighs attached and
-breast halves)
1 1/4 cupAll-purpose flour, seasoned
-with 1 t paprika, salt and
-pepper
To taste)
1/2 cupThinly sliced onion
2 medGralic cloves, minced
2/3 cupDry Marsala
1 Green bell pepper, cut into
-julienne strips
2 Carrots, thinly sliced
1 Celery stalk, thinly sliced
1 cupCanned crushed Italian plum
-tomatoes
1 tspDried basil
1 tspDried thyme
1 tspDried oregano
Salt and pepper to taste
Procedures:
1Heat oil in heavy large skillet.
2Coat chicken with seasoned flour, shaking off excess.
3Brown chicken on all sides over moderate heat, being careful not to crowd skillet.
4Remove and set aside.
5In the same skillet saute" onion and garlic 3 minutes.
6Turn heat to high and add wine, scraping up browned bits from bottom of skillet.
7Add chicken, vegetables and herbs.
8Cook 5 to 7 minutes.
9Cover and simmer until tender, about 30 minutes.
10Add herbs.
11Adjust seasoning to taste.
12Serves 6
