Ingredients:
3 lbsChicken, quartered
1/2 cupFlour
1 tspSalt
1/8 tspBlack Pepper
1/4 cupButter or Olive oil
(can be mixed )
1 medOnion, sliced
1/2 lbsMushrooms, fresh sliced
1 Clove Garlic, minced
12 Olives, ripe whole
4 ozTomato puree OR
1 cupCanned
1/2 cupClaret wine or sherry
Procedures:
1Dust chicken parts with flour which has been well mixed with salt and peppe.
2Saute in butter(or olive oil) until golden brown.
3Add remaining ingredients, cover, and simmer over low heat for 20-30 mins.
