Ingredients:
1/4 cupOlive Oil
1 largeRed Onion, thinly sliced
6 largeGarlic Cloves, thinly sliced
1/2 largeRed Bell Pepper, thinly
-sliced
1/2 largeYellow or Green Bell Pepper
-thinly sliced
1/4 tspDried Crushed Red Pepper
Salt
Pepper
16 ozBoboli, (baked cheese pizza
-crust)
5 ozSoft Goat Cheese, crumbled
1 tbspFresh Thyme Leaves, or
1 tspDried Thyme Leaves, crumbled
Procedures:
1Preheat oven to 450°F.
2Heat olive oil in a heavy large skillet over medium-low heat.
3Add sliced onion and garlic and saute until very soft, about 20 minutes.
4Add sliced bell peppers and saute 5 minutes.
5Mix in dried crushed red pepper.
6Season with salt and pepper.
7Place boboli on a pizza pan or cookie sheet.
8Tip skillet so oil accumulates at one side.
9Brush boboli with oil in skillet.
10Top with onion-pepper mixture.
11Sprinkle with cheese and thyme.
12Bake until cheese melts, about 12 minutes.
13Cut into wedges and serve.
